St. Patrick's Day Pencils

I wanted to make something for Jennifer to take to daycare for St. Patrick's Day to give to her friends.  I saw this at DYI and thought it was so cute,  They made their own shamrock out of CS, but I really didn't like how it turned out, so I purchased these cute shamrocks at the $1 store.


I put them in a paper cup just for ease of traveling.  She was so excited when she saw them.  She loves all that sparkle!  I just cut two slits in the shamrocks so I could slid the green pencils through,


 Then I computerized this cute little saying - How lucky for me to be friends with you - Love Jennifer.


Since I'm half Irish, I always have the tradition dinner for St. Patrick's Day - corn beef, cabbage, red potatoes and carrots.  While I was looking for a dessert, I found this bundt cake on Pinterest.


It turned out so good.  We had to taste it tonight to make sure!!


It's hard to tell in the picture, but the cake is green!  It was so simple to make.  Here is the recipe:

Shamrock Bundt Cake

1 (18.25 oz.) package of yellow cake mix
1 (3-4 oz.) package of instant pistachio pudding mix
4 eggs
1 1/2 cups water
1/4 cup vegetable oil
1/2 tsp. almond extract - I left this out due to reviews against it
drops of green food coloring

Preheat oven to 350 degrees.  Grease and flour a 10 inch tube pan.

In a large bowl mix together cake mix and pudding mix.  Make a well in the center and pour in eggs, water, oil, almond extract and green food coloring.  Blend ingredients, then beat for 2 minutes at medium speed.

Pour into prepared 10 inch tube pan.  Bake in preheated oven for 50-55 minutes, or until cake springs back when lightly pressed.  Cool in pan for 15 minutes.  Turn out onto a wire rack and cool completely.

When cool, dust with powdered sugar or drizzle with glaze.  The beautiful green color is a beautiful surprise when you cut into it.

We are still digging out of almost 2 feet of snow and ice!  What a mess!  Then this afternoon we got another 2" of snow.  Hopefully, Spring is on its way!  We hope you have a wonderful St. Patrick's Day.

Those pencils are so cute and I know Jennifer was thrilled to have them to hand out to her friends! They make an even cuter presentation in the two shades of green. The cake sounds delish! Pudding makes it so moist and yummy. I've seen your snow on the news. Sheesh! Good that you have power at least!

Oh gosh those pencils are adorable. Jennifer is so blessed to have you in her life. That is so awesome. I think your cake is amazing. I love pistachio pudding. Our family always makes a pistachio pudding cake that has cream cheese and layers. Reminds me of spring. an gosh I hope it comes soon too.. I'm so sorry to hear about all that snow you got. I guess we are suppose to get some more too.. I keep telling myself eventually summer will be here. Again my friend your project pencils were perfect.
